Os frutos: azeitona s\u00e3o a mat\u00e9ria prima para a extra\u00e7\u00e3o de azeite e em menor quantia, para a elabora\u00e7\u00e3o de azeitona de mesa\/alimenta\u00e7\u00e3o.\u00a0\u00a0Por causa do sabor amargo, devido \u00e0 presen\u00e7a de polifen\u00f3is, a utiliza\u00e7\u00e3o das azeitonas na alimenta\u00e7\u00e3o, requerem de um tratamento\u00a0pr\u00e9vio\u00a0 para remover o amargo delas. Existem diversas formas para remover o amargo das azeitonas.<\/h3>\n<h3>O fruto (azeitona) \u00e9 uma drupa oval, de cor vari\u00e1vel (de verde ao roxo).\u00a0 A polpa \u00e9 carnosa e contem\u00a0 entre 25-30 % de azeite, localizado nas c\u00e9lulas em forma de pequenas got\u00edculas. A semente (caro\u00e7o), \u00e9 lenhoso, ovoidal de cor marrom. \u00c9 uma planta sempre verde em atividade continua,\u00a0 se atenuando no per\u00edodo invernal. Os ramos frut\u00edferos sao cumpridos , flex\u00edveis, pendulares possuem cima saliente. Si adatta abbastanza bene alle diverse condizioni pedologiche, ha per\u00f2 una scarsa tolleranza al freddo. The major zones are as follows (1984): Jaen = 422,000 ha (90% of total olive orchards), Cordoba = 108,000 ha, Granada = 50,000 ha. In\u00a0 1995, Picual plantings took up 55% of new orchards in Spain. Both the fruit and\u00a0 the pit are pointed in shape. La fruttificazione \u00e8 elevata solo quando le condizioni agronomiche sono ottimali. Fiorisce tardivamente e presenta un elevato numero di fiori con ovario abortito. Autoincompatibile; come impollinatori sono stati segnalati: &#8220;S.Caterina&#8221;, &#8220;Itrana&#8221;, &#8220;Rosciola&#8221;, &#8220;Morchiaio&#8221; e &#8220;Giarraffa&#8221;.<br \/>La produttivit\u00e0 \u00e8 media e costante. La maturazione precoce e la consistenza della polpa permettono di utilizzare i frutti per la produzione di olive verdi in salamoia. Il rapporto polpa\/nocciolo corrisponde a 6 e il distacco della polpa risulta agevole.<br \/>Per questa cultivar \u00e8 stata segnalata una particolare tolleranza al freddo, all\u2019occhio di pavone, alla rogna e alla carie del legno. La maturit\u00e0 \u00e8 piuttosto precoce e questo permette all&#8217;Olivo Maurino di resistere bene al freddo, alle nebbie fredde (causa di numerevoli muffe sul frutto e malattie). The Moraiolo olive tree has less robust rootstocks and an assurgent growth. The fruit is usually round-shaped and small-sized. The Moraiolo cultivar has an extraordinary production yield. Olive Oil PDO Umbria is produced with olives harvested not later than 15th January and pressed within the next few hours. The maximum production capacity cannot exceed 5,000kg\/hectare. It is mandatory to include in the label the production date of both the olives and the oil. The Moraiolo olive oil has a medium-intensity, fruity smell, with notes of artichoke and herbs.
